Did you know radishes lose their bite when they are cooked?
They do and they are very low carb, which makes them perfect for diabetics and others who limit their carb intake.
This Crockpot meal combines beef, radishes, and celery with a slightly sweet, gingery sauce for a delightful low carb meal.
* Ingredients *
2 lbs raw carne picada
1 lb radishes
2 ribs celery
1/4 cup Da Vinci Orange
Sugar-Free Syrup
1/4 cup apple cider vinegar
1/4 cup soy sauce
1 tablespoon
Fiberfit Liquid
1 tablespoon dried onion flakes
2 teaspoons ground ginger
1/4 teaspoon garlic powder
* Step 1 *
Place the meat in the Crockpot and separate the pieces so they aren't stuck together.
* Step 2 *
Wash the radishes and cut off the ends.
Cut the large radishes into fourths and the smaller radishes into halves.
* Step 3 *
Add the radishes to the meat in the Crockpot.
* Step 4 *
Wash the celery and trim the ends.
Cut the celery into approximately 1" pieces.
* Step 5 *
Add the celery to the radishes and meat in the Crockpot.
Set aside.
* Step 6 *
Pour the orange syrup into a small bowl.
* Step 7 *
Add the apple cider vinegar to the bowl.
* Step 8 *
Add the soy sauce to the bowl.
* Step 9 *
Add the Fiberfit Liquid to the bowl.
* Step 10 *
Add the dried onion flakes to the bowl.
* Step 11 *
Add the ground ginger to the bowl.
* Step 12 *
Add the garlic powder to the bowl.
* Step 13 *
Stir the mixture well and pour it over the meat and veggies in the Crockpot.
* Step 14 *
Stir the ingredients together well, put the lid on the Crockpot, and cook on high for 2 hours.
(If you are available, stir about halfway through the cooking time.)
* Step 15 *
When the meat and veggies are cooked, serve them in bowls with or without the juices.
* Tips *
- This makes 4 servings with about 4 net carbs per serving.
- The celery will be tender crisp; if you want it softer, cook longer.
- Carne picada is thinly sliced beef pieces; you can sub other small pieces of raw beef.
- Fiberfit is soluble fiber sweetened with sucralose; you can omit it or sub with another sweetener.
- Crockpot cooking times vary; make sure the meat is cooked and the radishes are soft before serving.
