Low Carb No-Bake Chocolate Cheesecake Who says you can't have dessert while controlling your weight and/or BGL (Blood Glucose Level)?

Cheesecake is a delicious addition to your low carb lifestyle.

This is an easy chocolate version that doesn't need to be baked.




* Ingredients *

1 packet Knox unflavored gelatin (1 tablespoon)
1/2 cup boiling water
4 packets
Swiss Miss Diet Hot Cocoa Mix

3 packets Splenda
1 cup heavy whipping cream
16 oz softened cream cheese


* Step 1 *

Dissolve Gelatin In a small bowl or measuring cup, completely dissolve the gelatin in the boiling water, stirring constantly until there are no more lumps.

* Step 2 *

Add Swiss Miss Add the Swiss Miss and Splenda; stir until smooth.

* Step 3 *

Put in the frig to chill just until cool.


* Step 4 *

Whip Cream While the chocolate mixture is cooling, in another small bowl, whip the cream with a mixer until stiff.

Set aside.

(Don't worry about cleaning the beaters yet; just use them as is in the next step.)

* Step 5 *

Whip Cream Cheese In a medium bowl, beat the cream cheese with the mixer until fluffy.

* Step 6 *

Add Chocolate Gradually add the cooled chocolate mixture to the cream cheese as you continue beating.

* Step 7 *

Fold in Whipped Cream Gently fold in the whipped cream with a spoon.

* Step 8 *

Grease Pie Pan Grease a 10" pie plate similar to this one.

* Step 9 *

Spread in Pan Spread the cheesecake mixture in the pie plate.

* Step 10 *

Chill for several hours.


* Tips *

- This recipe makes 8 servings with about 3 net carbs each.

- A glass pie plate works well and looks pretty for serving.

- You can soften the cream cheese by using a glass bowl and microwaving it briefly before beating.

- Swiss Miss Diet Hot Cocoa is not the same as Swiss Miss Sugar-Free Hot Cocoa; Diet has fewer carbs. But you can sub any sugar-free hot cocoa mix; just make sure you adjust the carb count as needed.
