Low Carb Olive Can Chicken You've probably heard of Beer Can Chicken.

This version uses an olive can and the juice from the olives to make a flavorful chicken that is moist on the inside and crispy on the outside.

Because this baked chicken is low carb, it is a great addition to a healthy diet, including for diabetics.



* Ingredients *

4 lb whole chicken
6 oz can black olives
3 tablespoons olive oil
1 teaspoon Worcestershire sauce
1 teaspoon dried parsley
1/2 teaspoon rubbed sage
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/4 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper


* Step 1 *

Preheat to 375 Remove all the oven racks except the lowest.

Preheat the oven to 375.

* Step 2 *

Rack in Pan Put a chicken can roaster in a pie pan to catch any overflow (if desired).

Spray or oil the upper parts of the roaster to keep the chicken from sticking to it.

* Step 3 *

Olives in Bowl Remove the lid from the olive can and pour the olives with their juice into a bowl.

* Step 4 *

Remove Label Remove the label and any glue from the can.

* Step 5 *

Use Funnel Use a funnel to return the olive juice to the can.

Leave the olives in the bowl and save them for another use.

* Step 6 *

Can in Rack on Pan Put the can of olive juice into the roaster.

Place the roaster in a broiler (or other deep) pan to give it stability and make it easier to get in and out of the oven.

* Step 7 *

Wash Chicken Remove any giblets and wash the chicken inside and out under cold running water.

Pat the outside of the chicken with a paper towel to remove most of the water.

* Step 8 *

Chicken on Rack Put the chicken on the roasting rack like it shows in the picture.

* Step 9 *

Oil and Worcestershire In a small bowl, add the olive oil and Worcestershire sauce.
 

* Step 10 *

Add Seasonings Add the dry seasonings and mix them well with the liquid ingredients.

* Step 11 *

Smear Oil Pour the oil mixture over the chicken and spread it around with your hands.

Make sure to get under the wings, around the legs, etc.

Fold skin over top opening of chicken.

* Step 12 *

Chicken in Oven Carefully put the chicken into the oven and bake it for 1  1/2 hours.

* Step 13 *

Let Stand Carefully remove the chicken from the oven.

Let it stand for at least 10 minutes.

* Step 14 *

Chicken Served With hot pads or mitts, carefully remove the chicken from the roaster and place it on a plate or platter to carve and serve it.

* Tips *

- There are many chicken can roasters available; the one used in this recipe was an inexpensive model found at Walmart.

- Be very careful removing the chicken from the oven; it is heavy.

- Silicone mitts work well for removing the chicken from the rack.
