Low Carb Orange Spice Flax Cookies Think you have to give up cookies to eat low carb? Think again!  These light, airy cookies are not only low carb, but gluten-free, too. 

They're great for diabetics and anyone else who eats low carb, including those who are gluten intolerant or want to avoid wheat for other reasons.


* Ingredients *

1/3 cup flaxmeal
1/8 teaspoon cinnamon
Pinch of salt
1/3 cup Orange Da Vinci Sugar-Free Syrup


* Step 1 *

Spray Mold Spray or oil a mini tartlet silicone mold and set it aside.

* Step 2 *

Flaxmeal Pour the flaxmeal into a small mixing bowl.

* Step 3 *

Add Cinnamon Add the cinnamon to the flaxmeal in the bowl.

* Step 4 *

Add Salt Add the salt.

Using a mixing spoon, stir to combine the ingredients well.

* Step 5 *

Add Orange Syrup Add the orange syrup.

Stir the batter until it starts to thicken.

* Step 6 *

Divide Batter Divide the batter evenly into the prepared mold cups.

* Step 7 *

Filled Mold Spread the batter as evenly as possible in the cups.

* Step 8 *

Microwave on high for 5 minutes.


* Step 9 *

Remove from Mold Remove the mold from the microwave and immediately turn it over onto a plate to remove the cookies.

* Step 10 *

Let Cool Let the cookies cool upside down for a few minutes before serving.

* Tips *

- The entire recipe contains about 1 net carb.

- You can use a different mold, small silicone mat, or waxed paper, but check cookies carefully during cooking because the time may vary.

- Flaxmeal is sensitive to heat, so keep it stored in the refrigerator or freezer until you use it.
